The rest of the pig was killed off by boomers, strangely enough. The effort to breed a less fat pig is why chops have the reputation of being a bland, boring weeknight meal. If I bake a chicken, I only need salt and have fatty drippings. If I roast a chop, I have to brine it for sure or else it'll come out stringy.
