Someone please explain the appeal behind sour cream. Why would you want something to ever taste sour, especially if it's supposed to taste savory?

Who says sour cream isn't sour? I've never heard that. Sourness is a basic taste though and if your food doesn't have a sour component, it's probably lacking. Even just adding a little white vinegar to a lot of things will improve their taste.

Sour cream, or mexican crema, or salvadoran crema (the best one) taste good with spicy foods, not just for the cooling effect, but flavor wise as well. Sour foods taste good with spice and chiles, and with sweet foods like fruit. It adds some tang and creaminess to things like eastern european foods that are hearty and spiced, like stroganoff, paprikash, meatballs, etc. It balances flavors and tastes. It's used for the same reason people use buttermilk to make dressings, sauces, and baked goods. The cultures in it also tenderizes.

When I was in elementary school they made me read some book about this family who all ate sour cream, like as a side dish with everything. I forget the title. They'd just slurp up spoonfuls of the stuff. Once they had a visitor and even he thought it was weird, so they gave him sugar to put on the sour cream. My teacher raved about how much she loved this book but that's all I remember of it.

anybody else only like sour cream right after you open it but after it sits in the fridege for a few days the taste changes and it gets blah even if you pour the liquid off the top or if you stir it in it gets watery
