good eats is a dad-tier gadgets and trivia show with recipes sort of randomly picked based on whim. it is not a systematic resource for cooking. each episode is like 'here's some cool shit to do with apples' or whatever.

what it does teach is that there are multiple ways to do things, you can be as unorthodox if you want as long as you understand the basic principles of heat transfer and moisture management and shit like that, but it does not teach those principles itself. however the people who watch the show are likely to be nerdy dudes trying to learn thermodynamics off of wikipedia so it fits in very well with their autodidactic curricula
