Most wild animals don't care that much about what their food tastes like, they just eat what's easier to get and what their instinct "tells" they can digest. Also, different animals have different lifestyles and taste palates. I'm pretty sure eucalyptus leaves and raw blood taste absolutely disgusting to humans, but koalas and vampire bats don't seem to be bothered by the tastes.

Answering the question about dogs tasting good to humans, i don't think so. Despite domestic dogs themselves being omnivorous, the wolves they descended from are almost pure carnivores, and endothermic carnivores tend to taste bad. Dogs also really fatty and don't have that much meat. Some Asian countries eat dog meat, but i guess they're just used to eating stronger-tasting stuff.

Dogs were used for work throughout history. They were used to guard houses, even back in Roman times. They have been used to round up farm animals of course, and also they're used in hunting for tracking prey and also for collecting prey that has been shot by the dog's owner. And of course these days dogs are used by the police, as sniffer dogs. And they're used as guide dogs. All sorts.

So that is most likely the reason. Pigs might be intelligent but they haven't proven themselves to be as useful to humans as dogs. Cats too were helpful throughout history, mainly for pest control. So again that's probably why western people didn't want to eat these animals; they were useful.

Also there's the fact that cats and dogs don't have much meat on them. Pigs, cows, and even sheep have more meat, which is probably why we came to eat them. Chickens are quite small but they have a fair amount of meat and, importantly, they give us eggs, which is a big reason to farm them. So then once you've farmed them for their eggs, you may as well eat them.

"Ethics" only exist for pragmatic reasons. You must understand this. I think I understood this as a young teenager. It really doesn't take much brainpower to understand it.

Cultural reasons. Pigs are just as smart and have as much personality as dogs, but they've been bred exclusively as a source of meat. Dogs are a bad source of meat and have many other uses. Morality is literally a tool in the genetic/cultural toolkit that makes humans work as social animals and allows them to build complex and functional societies. Because dogs have been selectively bred for thousands of years to be useful work tools or companions, are low mass carnivorous animals and as such it would generally be deleterious behaviour to butcher them for their low yield of low quality meat.
