A lot of the population lived on or worked on farms as recently as a century ago. Farm people ate big meals because farm work could burn 3500 calories a day. So many families have a tradition of large meals picked up from their great grandparents. On top of that the early part of the 20th Century saw the Great Depression where Americans literally starved to death followed by the WWII rationing. For those who lived through that wasting food and being stingy with it was unthinkable, so they served large portions and expected you to clean your plate. portion sizes in the US have always been large, it started way back in the 1800's people from europe visiting the US commented back then on it. The US is a prosperous nation and it was a sign of wealth to have a lot of food, also it's due to marketing and restaurant competition:

Most of the big chains give a lot of food since they get it all in bulk anyway for pennies on the dollar. It's a pretty good deal since it'll last you multiple days and it's usually inexpensive.

I've also gone to fancy Italian restaurants that have literally served me five (5) ravioli as a dinner and these weren't giant ravioli's they were medium sized at best with just a tiny bit of filling to give it a bump. All that for nearly $18 or something.

They are not, but people do eat far more than 1 serving for most foods. The meal in your images is a little over 2 servings just for waffles. A serving size for bacon is 1 strip. Eggs...1 egg per servings. Thus, that meal probably has 2-3 eggs, 2 waffles, and 3-4 strips of bacon. There's enough food there for 8-12 servings and if that's sausage in there somewhere you can throw it all out the door. There's enough there to feed at least 4 people.
