Ingredients
2 very ripe banana peels
3 tablespoon soy sauce
1 tablespoon maple syrup
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1 tablespoon light oil (or more if needed)

Instructions
remove the peels from the bananas and tear into about 4 strips per banana. Use a spoon to lightly scrape off the white inside part of the banana peel leaving just the peel.

Mix the soy sauce, maple syrup, smoked paprika, and garlic powder together. Add the banana peels and toss to coat. Let marinate for a minimum of 10 minutes, but as long as a few hours.

Heat the oil in a large skillet or frying pan over medium heat. When hot add the peels and fry a couple of minutes per side, until they are golden. Remove from pan and drain on paper towel. They should get crispier as they cool.

2 medium organic bananas
1 ½ tablespoons olive oil
1 teaspoon hot smoked paprika
¾ teaspoon chili powder
¾ teaspoon dry mustard
¾ teaspoon garlic powder
¾ teaspoon onion powder
¼ teaspoon cumin
A few splashes of water
2 tablespoons barbecue sauce
A pinch of salt
Vegan coleslaw
1 bun

Instructions
Slice the top and bottom off the bananas remove the peels. Scrape the white part off the inside of the peels with a spoon.
Shred the peels with a fork and cut them into 2 to 3 inch-long pieces. Transfer to a bowl and add the olive oil, paprika, chili powder, mustard, garlic powder, onion powder and cumin. Mix well and set aside to marinate while you prepare your coleslaw.
Heat a pan over medium heat and add the shredded banana peels. Add a small splash of water to help them steam and tenderize.
The cooking time will depend on how ripe your bananas are (the riper they are the faster they cook) so start tasting after a couple of minutes. It’s important that they are tender enough to bite through but not so overcooked that they turn to mush. They should be done in around 5 - 10 minutes more or less. Add another splash of water and keep cooking if the pan goes dry before they are tender.
Add the barbecue sauce and give them another 30 seconds to a minute more to incorporate the flavour. Add a pinch of salt to taste. Remove from the heat and let cool for a minute.
Pile the banana peels on your bun and top with your coleslaw.

5 banana peels
Flesh from 1 banana
½ teaspoon mustard seeds
1 tablespoon vegetable oil
Red pepper flakes, to taste
4 cloves of garlic
1 small onion, chopped
1 small jalapeño
1 tablespoon turmeric
1 teaspoon curry powder
Salt, to taste

Boil the peels for 15 minutes. Then, drain and chop them into small pieces.
Sauté mustard seeds in oil until they start to pop.
Add the red pepper flakes, garlic, and onion, and sauté until golden brown. Then, add the jalapeño and banana peels and cook for three more minutes.
Add turmeric, curry powder, banana meat, and salt and then cook for about 5 minutes.
Put the mixture into a blender and blend until mostly combined. The consistency should be slightly lumpy.

1 cup boiling water

Place the banana skin in a pot and cover it with water. After the water reaches a boil, let the banana soften for about 10 minutes.

INGREDIENTS
6 banana peels (brown ones are fine)
1/2 cup water
4 eggs, separated
2 ½ cups white sugar
3 cups plain flour
75g butter
2 tablespoons baking powder

Preheat oven to 190°C. Grease a 20cm cake tin
Put the banana peels and half a cup of water into a blender or food processor. Blend them until they turn into a smooth, dark brown, aromatic mush. Set aside.
Beat the butter, yolks, and sugar in a mixing bowl until it is all combined —it should have the consistency of fluffy scrambled eggs.
Add the banana peels, the flour, and the baking powder, and mix well.
Whisk the egg whites until frothy, and gently fold into the mixture, careful to preserve the air.
Pour into a cake pan. Bake for about 45 minutes, or until the cake passes the toothpick test.
