I work at a taqueria and got the task to come up with a menu for our next taco tuesday.

Since there are going to be a lot of people it should be easy to make, usually we make birria, so we just have to shred the already coocked meat, but people are getting bored of it.

What are some other taco Variants that are easy to serve when we are really overrun?

Do a really thick chile verde but with chicken thighs and either sliced shallot or pickled sweet onions. I’ve made it in my instant pot, getting a good hard brown on the thighs first. It was good as fuck.

Another crazy thing to try is a huge beef chuck, if you braise it with soy sauce, a kiwi, peeled and quartered per 4 pounds, stock of any type, and some rice vinegar, then when nearly done transfer to a baking sheet and crisp. It’s basically Taco Bell steak gourmet version, weird as that sounds. Wife and I ate 4 pounds of this shit in various forms but with lime, white onion, and cheese you just can’t fucking beat it. Hope this is food for thought.

One more thing. We all know if you take a pork shoulder, do a wet rub with brown sugar, smoked paprika, a ton of minced garlic, and red wine vinegar to paste-ify it, then go at 250 for six plus hours, you get basically pulled pork. What if you did this with piloncillo sugar and instead of vinegar, sub in a cheap Mex vinegary hot sauce like Tapatio, and instead of pulling you slice or chunk? Maybe brush with a little mole of something for a curveball.

so we have reduced prices on tacos thats why we are usually overfilled, considering were probably the only place with somewhat authentic tacos in the country.
My limitations are that it should be easy to get out, thats why we usually stick with stuff that is precooked so we dont have to cook raw meat on demand.
we usually do a meat and a veggie item, but our boss is trying to get us to make a second meat item.

Taco ahogado.

Make carnitas.
Pickle red onions
Make a lot of tomato sauce tomato sauce, tomato, onion, garlic, ground clove, oregano, salt. Allow sauce to simmer until flavors concentrate/meld
Make a fried potato taco could also make beans
Then make a spicy chile the arbol sauce (water, griddled chile de arbol, salt)

Plating:
Take a taco, dunk in the tomato sauce
Put on plate
Add carnitas on top of plate
Add shredded cabbage
Add pickled onions
Add a laddle full of tomato sauce on top of everything.
Serve with lime wedges and spicy sauce on the side

Messy to eat but very good. The richness of the carnitas and fried taco are cut againsts the acidity of the tomato pickled onions and lime. The tomato sauce adds sweetness and and herbal note. Very good stuff.

What do I need to do with the onions to get these?
My white onions always bite too hard and chives taste different.

Also general recommendations on spicing the carne would help. I'm a cream cheese looking blanco, but have had pretty good luck cooking the meat in habanero olive oil. The mexican spice grocery aisle is strange and confusing to me.
