Japanese curry doesn’t deserve to be made from scratch desu. I like Jap curry and I eat it a couple of times a month. I do it because it’s easy tastes good enough. The premade roux boxes does the job. If I want a nicer curry I’d just make a proper Indian one.

That's probably true. I'd even go so far as to say that unless you're willing to do all the crazy shit specialty curry places in Japan do (simmering it for days on end and whatnot), you will get a better result from just using the boxed stuff by itself or with a few extra ingredients.

Look at the base levels of how to make Japanese style curry and then just add in whatever you want. Curry is one of those dishes that doesn’t need to taste exactly the same every time, it’s easy to experiment. Pic related is a Japanese curry I made, except I added okra. Came out great. Next time I make it I’ll probably use pineapple, either the juice as an addition to the sauce or just flat out diced chunks.
