I'm an activist, dear /ck/.
I defend that Yuca Fries are objectively better than French Fries.

My reasoning:
>Crunchier than fries
>Stays hot for longer
>Salty goodness
>Is at it's best as a barbecue side dish

What do you guys think? Have you even tried some? For anyone interested I can give the recipe to do it.
It's indigenous from Brazil and its the absolute crown jewel of fried goods in my eyes.

It kinda takes some effort to make them, but it's worth all the effort. But here's the thing:
They HAVE to be from the right season. If they are not they'll get chunky and flavorless.
They are the best when after pressure cooking they are entirely light yellow. That means that there are no white dense chunks.

Here's a personal recipee for anyone interested.

>Grab some yucas from the right harvesting season (july-october)
>Get rid of the skin and wash them
>Water it up untill it's fully submerged, salt it well and pressure cook that bitch for 15 minutes
>It's done if you can stick a fork through one with almost no resistence.
FULL STOP.
This is already a finished dish, a soft yuca. Just butter that bad boy and season it. It's great.
Back to the fried yuca.
>Cut them into smaller sizes so they get evenly fried
>Deep fry them untill they are golden or slightly brown
>Before serving, season with paprika and some salty cheese.

I could eat only this for a full week and die a happy man.

I'm Brazilian, so, yes.

When done right, they're heavenly. The trick is to fully cook them before frying, so that they kind of open round the edges. That gives you the crispiest fries. Even works with potatoes.

Heston's triple-fried chips follow the same idea, and I suspect his inspiration was us.
