What do famous quote mean, to you.

I thought the quote was 'hunger was the best spice'. That quote makes me eat better higher quality food but less.

And the meaning's pretty straightforward. When you've been eating more than enough for you calorie needs every single day multiple times a day without a fail it's a lot more likely different foods are going to start becoming less appealing to you and you might still eat lots of food but you'll probably get sick of one thing and try something completely different instead.
Meanwhile if you're some starving concentration camp worker and the Allies just liberated you then you're going to find whatever low quality food they have on hand to be the most incredibly appetizing meal you've ever had. They had to be careful with that towards the end of WWII because these people would literally kill themselves by eating too much with their atrophied stomachs and bleeding out from the inside after their GI tract starts rupturing.
Moral being if you ever find yourself in some survival situation where you haven't eaten much of anything in a very long time and you finally make it back to civilization DO NOT just stuff whatever food you can find down your throat. Start small and gradually build up to larger portions again.
