Ehh, I usually make my stews with a reasonable fat content but I guess some fatty cuts of meat might render more fat than you'd actually want in your stew.
I made duck au vin a while back and I definitely had to remove some of the fat from that. Did it early on rather than at the end, though, since I wanted to save the fat but didn't want it to be flavoured.
