Makes it more savory like cucumber, and brings out some grassy veggie flavor in some way. I don't mind feta-onion-watermelon salad, watermelon-gazpacho soup, and other kind of savory recipes. In conclusion, it's alright with salt, and something you can do if watermelon is slightly unripe, but not my preferred method to eat it. If I want cucumber, I'll buy that instead.

watermelon salad is basically any recipe you'd do with cucumbers, and it has an affinity for mint. Sometimes I do half/half cucumber and watermelon, depending on ripeness of the watermelon.

olive oil, lemon juice or wine vinegar, fresh torn mint, fresh basil or oregano sometimes. The technique is that you toss your thinly sliced or diced onions in your vinaigrette to marinate a bit. Can add kalamata olives in lieu of oil. So, it's somewhere between greek or italian, depending which spice direction you go, but the feta you should cube yourself, which is my pro tip, it's better marinated and separate, rather than crumbles that overwhelm each bite.

I like it with salt and without. I’m weird about watermelon tho. I like it firm and sweet. If it’s pithy and soft I can’t stand it. I only eat it by itself and don’t really like watermelon flavored stuff very much. I do like watermelon rind pickles.

I was given an almost similar recipe. A big difference is that I was told to sweat the cucumbers overnight with salt. Pretty good salad, great alternative to tomato salads in summer.
