So back in the 50s (idk how it is now, I'm not in medicine) it was a thing to send in joke letters to medical journals with self-diagnoses for gag diseases (like saying your buddy must have an impacted colon because its coming back up out his mouth). Some doctor sent in a letter under an obvious Oriental pseudonym detailing his experience eating Chinese food and blaming it on MSG. However, the actual racists reading it swallowed it whole and repeated it.

If Chinese restaurant syndrome were real, pizza would cause it too, because tomatoes (and a whole lot of other shit) have naturally-occurring MSG.

MSG is the sodium salt of glutamate comprised of salt, glutamate and water.
Your body can not distinguish between the glutamate that naturally occurs in meat, and cheese vs the additive monosodium glutamate.
If one negatively affects you then the other should as well.

Right, I actually know what I'm talking about, so here we go:

Monosodium glutamate is a chiral compound, meaning it has four pieces coming off of a tetrahedral atomic center, with each of the four pieces being different. This means that you cannot stick it in its mirror image. Your hands are chiral; overlay them, if they were intangible, you could not perfectly slide them into each other. Even if you rotate one of them, your palms face different directions.

Your body uses enzymes for basically everything at the chemical level, and enzymes require molecules of specific chirality to work. The Gen. Chem 101 example of this is thalidomide; R-Thalidomide fixed morning sickness in pregnant women, L-Thalidomide caused horrid birth defects.

Pic related is MSG. See that amide (NH2) next to the carboxyl salt on the right? That thick line means its pointing towards you; that means it's D-MSG. If it were pointing away from you, it'd be L-MSG. L-MSG doesn't sit in enzymatic pockets like D-MSG does, so it causes a myriad of deleterious side effects. It also doesn't taste as good. All naturally produced MSG, such as that found in meat and other things that cause umami, is D-MSG. Industrially produced MSG is made by methods that create a racemic mixture of 50% D-MSG and 50% L-MSG.
