OP here, melted the honey back again, this time some thinner liquid formed on the inside of the jar, it's sitting ontop of the honey. The jar was shut tight in the pan, so I don't think water could have gotten in.

you could try adding a small amount of filtered water (say 1 tablespoon) then mix that in and heat the honey up to over 170° f.

Okay OP I’m gonna explain how honey works to you because apparently your IQ is below 100 or you’re age is below 18.
Honey is what’s called a supersaturated liquid, this means that technically it’s a mixture of water, sugar, and other shit bees put into it. Since it’s a mixture, and it’s SUPER saturated, this means that the ratio of water : things dissolved in water is very low, so low that in its “natural state” the sugar will crystallize, and once a single sugar crystal forms it becomes about a hundred times easier for more crystallization to occur. Because this process is only temperature dependent (when it’s colder, it becomes easier for crystals to form), the only thing required to reverse the process is to put the honey in a place that’s warm (just normal room temperature, definitely not over 30 degrees Celsius or 100 degrees Fahrenheit). Assuming it’s perfectly natural honey, changing the temperature will not affect the honey in any way, it will only affect how “liquid” the honey appears to be (I.e. how runny/thick it is).

Now, OP, to address your crystal retardation and the “liquid” at the top of your honey. The liquid is most likely the result of buying cheap honey, because in the US many brands of honey are similar to many brands of maple syrup, that shit is half fake. The liquid is probably something added to your honey, the crystals floating to the top is just natural for liquids when you’re warming them up. Also your fear of crystals is retarded, the human body is full of liquids and has a relatively high temperature, so unless you’re eating something completely unnatural the crystals will dissolve once they are in your body.

Here is a pic to illustrate my point that different types of honey, and especially the source, can make a huge difference.

The one on the left is from a supermarket, it tastes chemically and has a runny consistency. The next two are raw and sourced from a local farmer.
Sage has a unique and herbal flavor, it’s very good for certain kinds of tea and cooking. The avocado honey is, as you can see, extremely dark. It has a very buttery and rich flavor, and tastes almost earthy compared to the sage.
I’m sure you can tell just visually that the vitamin content among these three jars of honey is nothing alike.

I asked him what it was like and he turned the radio up to almost full blast and said it is like that 24/7. I have tried pretty much everything over the years to help him but I don't know if there is anything anyone can do. He won't interact with anyone else, he drove all his friends away. I play piano, crystals in my fingers sounds horrible. I’ll bite (and thoroughly explain)
The reason is because peanut butter has no moisture, and what people mean by that, is that peanut butter has extremely small amounts of dihydrogen monoxide (H2O). When you add honey to peanut butter, the relatively small amount of water (in honey) is “redistributed” to the peanut butter, and thus the honey (which is already in a relatively unstable balance of supersaturation) crystallizes as all the water is sucked out.

There’s a couple ways you can think about this that make sense. In one way, you have a super-saturated solution (honey) with no crystallization: crystallization being the one ‘key’ to crystallize the rest of the honey. Indeed, once one infinitely tiny sugar crystal forms, the rest of the honey will crystallize in response. You then add a “solution” of fat soluble molecules (oils, proteins) and other “crystalline” substances (salts, certain minerals). Since the second solution (peanut butter) has literally no water, it immediately ‘sucks’ the water (through osmosis) from the honey into the peanut butter, forcing the crystallization of sugar molecules that leads to a chain reaction in the honey. On the other hand, adding the honey to the peanut butter (which is chock-full of crystalline substances) gives the sugar in the honey a ‘seed’ from which the crystals can form much more easily.
