Hello friends, I just got an instant pot for christmas and have been using it a ton.
What are some of your favorite meals/recipes you use for it?

Trying to find a large portion pulled chicken breast recipe for it.

Straight up I just pressure cook the chicken in BBQ sauce, and then hand shred it (I have latex gloves, but you can let it cool- I vastly prefer hand shredding to the stupid two fork method), and then throw it back in with extra sauce for another 5-10 minutes.
A fucking home run is using your BBQ chicken inside a colby jack melt with sourdough bread (or really any bread).

1.3 on the rice. A pressure cooker forces water into the grain, it makes it starchy and sticky. Use the real rice cooking numbers. 1.3 is for sushi rice, 1 to 2 is for basmati. So use 1.3 for basmati in these beasts.

Half BBQ sauce, half Italian dressing. Just enough to cover everything and the bottom. The meat will release liquid as it cooks. You can thicken up the sauce/add more later.

yeah I know, but even on highest it seems low to me. Classic crock pots used to max out at a low simmer. Instapot slow cooking doesn't seem to get that hot. It takes way longer.

Sautée onion, green pepper and garlic. 1 1/2 c rice, 500ml water, can black beans, 12oz salsa, season with cumin, chili powder and smoked paprika. Pressure cook on high for 24 minutes and natural release.

Generally, I just put a cup of water in and let it depressurize naturally (8fl oz) and it goes beautifully. That's the minimum amount of liquid instructed by mine's instructions.
Also- if you're really trying to go to flavortown, you can just use chicken stock instead.
Also, always s&p to season.

not him but it depends on the type of rice. my sticky rice is 1:1.25 but my sushi rice is 1:1.5. if I use 1.5 with sticky rice it gets all wet and gloppy and gross. I don't use basmati but I'd assume it'd be more.

no, there is an objectively right and wrong way to do it. different grain sizes of rice require different hydration - what will turn one rice into a repulsive slurry will leave another one half cooked and tooth-shatteringly hard. don't be a fucking nigger and just dump water and rice in a pot then, surprise suprise, when it turns out inedibly shitty say that's your preference; exercise a modicum of agency and learn the proportions. if you buy a giant 25lb bag you only need to look it up once and it'll be second nature after 3 times.

Texas style chili comes out brilliantly. I add cinnamon in my spice blend to make it stand out, and a ton of garlic.

I can eat it as is with shredded cheese and raw onion on top, in a sandwich with ballpark mustard, or traditional Frito pie.

Makes a ton as well, so I always have leftovers for work/dinner throughout the week.

I use their insta zest rice cooker. I don't know if it's better than a regular rice cooker I just hope it doesn't wear out like those pieces of shit. I just cook rice and steam tilapia above it. Would chicken work too or would it be undercooked or chewy?
