That sauce had already reduced considerably so it really didn’t need thickening. It was just a bit too sweet. That little bit of parm knocked that sweetness down a bit and added a touch more saltiness. I’m really happy with how it turned out.

That thing boiled water in a fraction of the time it took my old pot. Im just glad I got it as a factory second. It would have cost an absolute fortune to buy a normal one.
