the water seals out air, air causes butter to go rancid.
the water is recommend to be replaced every 3 days.

No the butter doesn't get watery, and the water doesn't get buttery.
It keeps itself from going bad.
I change the water every few days, and the trick to getting the butter neatly in the glass is to use the back side of a spoon to pick up, and spread the butter into the glass.
Just chop up cold butter, and press into the glass until you fill it.
