Depends what you like. Like any other country the coasts will have more seafood variety. The Eastern Coast has more Caribbean influence so you'll see more Caribbean dishes. The Centre and West has what we most typically think of when talking about Mexican food. The South is the new upcoming star with a lot of new flavours. The north like any other continent continues to be savage barbarian "food" that eventually culminates into (insert state)-mex garbage.

Baja California if you want vanguard cuisine with Mediterranean influences
Mexico City has GOAT street food, you can spend the entire night hopping between taco stands like a multi-course dinner
Oaxaca is en vouge these days, Enrique Olvera (Mexico’s #1 chef for manny) takes most of his inspiration from there

Having been to both, GOOD chiapaneco food is pretty hard to come by even in chiapas. It's great where you can get it but you really have to know people. Whereas oaxaca has a pretty well developed restaurant industry.

That said I was there during the peak of the lacondon insurgency, it may be that since they stamped that out the restaurant industry has gotten bigger in chiapas.

Carne asada fries aren't from Baja, they're from San Diego. Baja, particularly Ensenada, has some of the best fish tacos you'll ever have, though. And I always try to take a trip to Rosarito when lobster is in season.
