Was at doc office and they had some box wine mom magazine with recipes in it.. Anyways saw something cool, baked al pastor. They pounded out and marinated pork and put it in a bread loaf pan and weighted it down over night in fridge. Then 275 baked for 4 hours, I might try this, also 2 hour covered and 2 hour uncovered. Then they sliced it and reheated in cast iron and served. Marinade was usual stuff pineapple juice, adobo, peppers.. but also had chopped bacon and italian sausage meat. Pics looked good.
