20% fat beef, only salt once on the griddle, smash at high heat.
Will 100% of the time be juicy and have no crumbs of raw meat in it. Which is disgusting.

Ramsey really doesn't know shit about burgers.
I saw a vid of him once, where he made burgers and he just put a shitload of shit in the meat.
Something like
>MIXED fucking mince meat pork/beef
>Dijon mustard
>Worcestershire sauce
>Onion and Garlic powder
>Ketchup
>Onions
>Egg yolks
>Not sure but I think fucking BREADCRUMBS
I mean what the fuck are you making Gordon, cause that's not a burger.

A burger is
>Ground beef
>Salt
>Pepper
Not half your pantry in some sort of meat loaf abomination.

Talking about the meat, which is the burger itself.
Buns, condiments all that, is important, but what sets a burger apart from being any other sandwich, is the ground beef patty.
If you put fucking pork and eggs and breadcrumbs into that, you are making frikadella or some shit.
A burger is just ground beef and seasoning.

That's very wrong. Terrible analogy.
It's more like saying, the hot dog is primarily the sausage, not the whole thing.
Which is true, you call the sausage a hot dog, you also call the whole thing a hot dog.
But you wouldn't call the whole thing a hot dog, if it weren't for the sausage, you get that?

In any case, you are arguing semantics and besides the point.
Breadcrumbs and egg don't belong in hamburger meat.

This. Burgers are supposed to be a simple food, if you want to show off your complicated artsy cooking skills them just make something else. It's like entering a walking race and then running.

I ate at his burger restaurant in las vegas and it was ok but imho not worth the price, would rather walk down the street and get white castle because atleast its different, ramsey burger was just a "burger" that was executed moderatly well but ive made better and ive ordered better at other places.

If you're certain about the quality of the meat you turn into a hamburger you could have it blue.
If it's cheap mince you'd best nearly burn that sucker.

>> No.13716871

>>13716660
Law of diminishing returns. It is not hard to ground ones own mince and use the freshest and highest quality ingredients and accoutrements in something as simple as a burger. After that you are fiddle-fucking in the twilight garden of individual taste with contrived and/or overpowered ingredients just as you say, which will turn away many more than it brings.

>>13716751
Had to get a meat grinder so that I could have steak tartare for the first time. Certainty is key. Cheap mince can also be had medium well, but you are leaving little margin for error.
