it's not great sauce, but some of it is hot garbage and some of it is pretty average to above average.

On the other hand, imagine not making your own tomato sauce. It's the easiest part of the pasta to make by hand at home, takes maybe 15 minutes to half an hour, and will taste way better than even the most expensive stuff you can buy in the store.

I stopped buying and started making.

1 Cast Iron Ceramic pot, small
2 Cups ground beef
3/4 Cup Onion fine dice
1/2 Cup Celery fine dice
1/2 Cup Carrot fine dice
1/2 tbsp oregano
1/2 tbsp basil
1/2 tsp garlic powder.
1 tsp rosemary
2 tbsp butter
1 tsp red wine vinegar
1 tsp red pepper flakes
1 tsp fresh ground 4 pepper blend
2 Cans Whole Tomato
1 Can Campbell's tomato soup.
1 Can Mushroom slices

Over medium high heat brown ground beef in cast iron pot and reserve. Add butter and onion, working the fond off the pan into the onion.
Brown onion then add carrot and celery and mix. Sweat mixture unti soft. Blitz one can of tomato to sauce consistency and add to pot, bring to a
boil and reduce heat accordingly, cleaning bottom of the pot with spatula. Cut second can of tomato into bit sized pieces and add. add spices and vinegar.
stir and bring to a strong simmer and cook for about 45 minutes. Simmer until a thick sauce consistency with a sweet flavour developing in the tomato.
Add soup, mushroom and ground beef and stir until thoroughly mixed. Spatula darkening sauce from the sides of pot and mix in.
Cook for another 30 minutes.

No! You do not 'carmelize' tomato sauce. You want it to retain the fresh bright acidic quality of the tomatoes, so you cook a marinara sauce for only a few minutes. You use canned tomatoes, olive oil, salt, and float a sprig of basil on top and that is all the ingredients you need. You simmer the sauce until it is just cooked- you take it off the heat when you see orange-ish oil beads floating on top- the olive oil mixing with the tomatoes- no more than 10 or 15 minutes. Tomatoes are delicate and carmelizing pulverized tomatoes = burning You do not want the sauce to darken because that means you have overcooked it. If you want grilled flavor then grill or roast whole tomatoes before pulverizing. But that's not marinara. It would make a nice topping for bruschetta.
