Two answers.

Ramen at home in Helsinki at a popular joint. Expensive and pretty fucking far from the real thing.

Second would be this Korean dish at my new home of Paris. The dish itself was executed well, but... due to my limited French skills I ordered a dish with tripes, figuring out it's tripe which I kinda enjoy, and the waiter tried to explain something to me and pointed at his stomach. Figured he was just extra careful about intestine as most people are not cool with it. It turned out to be chitlins. Really expensive chitlins. Fucking stewed.

Actually measured in disappointment levels, I have a good /ck/ story;
>be me years back, living in a flyover state
>a few years into becoming a lot more passionate about food and high-end cooking
>own tons of cookbooks and media about traditional Continental cuisine and French cooking
>out of blue I find out that there happens to be a classically trained in France, French chef who's like 90 years old living about 45 minutes away in an even more podunk town who has a small restaurant only open a few days a week
>he has all the right credentials and training and a lifetime of experience, moved out to the middle of nowhere to retire with his American wife
>he also teacher small classes on French cooking techniques, which were pricey but I was jumping at the idea
>decide to play it safe and have lunch first, and then see about classes later
>eventually go with a friend just at around noon, but they aren't very busy
>menu is classic French cuisine, not a huge selection but definitely not the thing you can usually find around that area
>notice a few old locals finishing up, as they leave I hear the wife mutter "I was NOT impressed" in earshot of the waitress, who sorta rolls her eyes
>feeling smug and smarmy I chalked it up to the locals not having a refined enough palate to appreciate the skills of a master chef
>peer into the kitchen and see the old chef, along with just a single Mexican soux chef who is mostly just doing prep and errands. the old man is hard at work over the stove
>waitress takes a while but eventually comes by for order
>being a basic bitch about it, I ordered beef bourguignon
>friends orders something else I can't remember, a simple pork cut I think
continued

>> No.13849005

>>13848967
>food takes 45 minutes to arrive despite it only being like two tables at this point
>my Beef bourguignon is basically reduced down to a sludge, with little shrived up beef nuggets
>vegetables are all either slimy or disintegrated
>however the worst part is how sour and "off" the dish tasted in general and the actually inedible level of salt present
>my mind takes a few moments to even properly conceive that the meal could be this bad and that I'm not eating it wrong or something
>wonder if perhaps its just my dish, so I ask my friend how he's doing
>his meat is completely oversalted like mine in the deglazed sauce, while the chop itself seems to have no seasoning or flavor and is actually raw inside
>not like "omg I need my pork 180 degrees inside or I'll kvetch" sorta raw, but actually like hardly seared on either side and stone cold dark pink when you cut in
>both realize we cannot eat anymore of our food, and the level of incompetence is not going to get fixed by sending it back
>decide the kindest thing to do would just be to pay and leave as soon as possible, because we REALLY did not want to talk to a senile old frog who speaks only broken English
>we discretely call the waitress over, say we just want her to quickly take our payment and lets us leave quietly
>she tries to figure out the problem asks us to send it back but we just didn't want to be there anymore
>when she gets back with the receipt she says the chef caught on and wants to talk to us/know whats wrong and we have to repeat we are in a hurry and don't want to talk to anyone
>as we walk out the door we see the old guy shuffle out the kitchen towards us trying to start a conversation, we engage hyper-autist thrusters and get in the car and out of the parking lot by the time he makes it to the door
>neither of us ever spoke of the experience again
It was a lot more disappointing in person because of how obsessive I was getting about cooking, and how lucky I initially felt.

I'm generally a sushi naysayer, too. I like Americanised sushi with mayonnaise on it. There's also a well-regarded and pricey Japanese-owned sushi joint near by that offers traditional rolls as well as ones with a bit more to them, like with fish liver in it to give it a fattier taste. Of traditional varieties, tuna belly sushi is obviously the best followed by marinated pressed sushi because both are fattier and therefore tastier. Neither are prohibitively expensive.

no fucking shit, most of you will never have good crawfish because you can't buy it in a restaurant, they go straight from crawfish ponds so they're small and taste like shit, hell you can't even get good crawfish from restaurants in southern Louisiana, you have to boil them yourself with swamp crawfish

People like to skimp out on Southern cooking. I feel like if you add too much salt to any southern meal, it's passable. But no, I've had chicken and dumplings that tasted like wet paper, mac and cheese that's just wet al dente pasta, barbecue that's flavorless - I can't help but feel like certain places do it on purpose, too.

For me the biggest dissapointmen was Prism in berlin. They have 1 star and honestly the food was just meh. Nothing really took me off.
For the change day later i ate at the place called Ernst also in berlin. Which was cheaper, and honestly much more interresting and tasty. Huge japanese influences mixed with nordic/ contemporary european cuisine. Grandiose products and great wine and sake pairing. Would definitely come back but i've heard they are closed definetly.

ramen is a thing of beauty, taut noodles in a steaming rich broth, ready for instant consumption.

Yet devouring a bowl of ramen can be ... daunting. Few foods inspire such a cultlike following, and yet it's kind of unwieldy to eat. Do you slurp up the long noodles, or attempt to "cut" them up with your chopsticks? Do you copy the guy that picked up his bowl and drank from it, or has he just never been to a restaurant before?

the proper method for eating ramen is to start by sampling the broth, as it is the broth that makes the meal. from that first sip, you are then allowed to apply any additional flavourings that you so desire, such as soy sauce or chili oil.

then, you take the noodles, and slurp them up. slurping is a sign you like them. if it is too much, you can cut with your teeth, not with the chopsticks. I usually take a few strands to prevent having too many noodles in my mouth. you slurp until all noodles are in your mouth.
if there is nori, please eat it within the first ten minutes, or before it gets really soggy.

it is acceptable to pick up the bowl and drink from it, but otherwise you are able to use the spoon for drinking the broth. I personally use the spoon until I am out of noodles, at which point I pick up the bowl and drink the rest of the broth.

the toppings, of course, can and should be eaten periodically throughout the experience.

Went to an Italian resturaunt and ordered a calzone, waited literally over an hour to get served the dish; It was fucking massive well over 30 cm long but the dough wasn't leavened properly so it was chewy and not bread like, the filling was the worst however it was like 80% cheese with a little ham and onion thrown in. I was drunk by that point (to be fair the beer was fantastic) so i thought fk it ive been waiting this long im gonna finish this bitch.

I'm not a picky guy and can go with most things but when i was walking home there was a nagging feeling in the back of my mind, it wass as if i felt ripped off, like I had been jipped of something i shouldve had.

Slowly it dawned on me: for the first time in the culinary world, I was left feeling disappointed.

I'm usually disappointed in tonkotsu ramen. I don't even know why I keep going to different restaurants to try their ramen when it's usually fairly mediocre - not terrible but not really worth the price. There are a couple exceptions though.

I ordered a chicken Caesar salad at the hip up and coming sports bar, it was a very small portion for the cost with badly burnt croutons and dry chicken and I think they forgot the cheese. We went another time to try it again and I got the Mac n cheese, which was again a ridiculously small portion for the price and had crispy burnt cheese with a chemical flavor, the essence of plastic. The abv was dropped around the same time it went international (you have the low abv version).
They completely lost their market share here because of it. Now only foreigners abroad drink fosters.

>>13861702
Until the abv was dropped and they lost their market share. Recognising the instantly punished mistake, they reverted the change. But they never got their market share back since a lot of people converted to craft beer in the meantime.
I'm having trouble finding stats, but it seems either VB, XXXX Gold or Carlton Draught is the current leader. IMO Carlton is the best of them.
