Theres kind of a mixed opinion in the food safety of eating undercooked chicken offal. Last time I was at a Brazilian steakhouse they were a touch pink still and I didn't enjoy them at all. Very rubbery and off-putting. I do like them cooked through, and have them semi-regularly at a japanese place.

Put em in some olive oil with spinach, onions, and garlic. That's what I normally do. Can also use chard or kale instead if you prefer.
