Boomer parents/grandparents will do that to you, unfortunately. I cooked a fantastic turkey for Thanksgiving one year, brined, and roasted until just cooked through so it was still juicy. But because it was slightly pinkish near the bone (totally normal) my grandmother threw the entire thing in the trash after ripping it to shreds with a fork, because I was trying to give us all "slamonalla".

So long as the food has been handled, prepped, and prepared properly, you're very unlikely to get ill from "undercooked" food. If you have a genuine fear, invest in a decent food thermometer, and study what the minimum internal temperature is recommended for different types of foods. Once you get the hang of it, your fear should start to diminish. ...and don't listen to boomers.

Everything you've mentioned in this post can be eaten raw or cooked. If there's been no cross contamination with raw meat or unwashed hands, you have virtually no risk of becoming ill from eating them at any stage of the cooking process - it's impossible to "undercook" them.

Couscous is pasta, and you're still at virtually no risk of "undercooking" it. You can taste test it at any stage during the cooking process and pull it from the heat when it reaches a texture you like.

eat or drink something acidic with it. Your stomach is acidic enough to break down food and kill harmful bacteria anyways. I've eaten raw meat and organs for months no problem but make sure it's sourced well, I wouldn't eat anything raw from fucking supermarkets. I did have a bad experience once from wild deer from a butcher. just a couple days of stomach ache

The reality is that your boomer/grandparents lived during a time when food handling quality was very low and dirty. Take a look at pigs for instance, years ago it was an easy way to get worms if undercooked and now the meat quality is much better to the point that you can undercook it without fear of getting a parasite.
