I have been talking to this girl a bit and she said “I want to try your cooking” after seeing something I posted on my Instagram story. What should I make? I know I don’t want to do something greasy/heavy or something that requires me to stand in the kitchen for an hour. As far as I know she’s not picky. I’m thinking about doing a not too heavy pasta (blistered cherry tomatoes, basil, garlic) and getting a good wine. Any ideas?

Make pesto. Find cheap basil somewhere; do not substitute any of the basil for spinach. If you need to substitute walnuts it's okay, just toast them and use a brush or your hands to remove the brown skin. I like Cookie and Kate's recipe with extra garlic (roasted is best) and extra parmesan.
Find frozen or refrigerated tortellini, preferably spinach. Err a little on the side of under cooked. As soon as this is drained, toss it with the pesto and the nicest halved cherry tomatoes the store has. If you have pine nuts, toss a few on top to serve for taste and texture. Make sure they are toasted. Serve with crusty bread
