I went to a really good culinary school and in our first year "international cuisine" course we spent one (1) day on Africa. It was literally Northern Africa, Ethiopia, and South Africa. Those are the only countries/regions with a recognized cuisine. The entire continent of Africa is less culinarily diverse than the United States.

No. It was one day, so we just went over general flavor profiles, unique ingredients, and spice blends. The day begins with a "lecture" and then you break off into small groups and everyone makes 2-3 different recipes. I honestly can't remember anything we made that day.
