Hands down one of the best condiments/dips on the planet. Also allows for one of the best sandwiches on the planet to be made. Can't go wrong with this one!

first off. buy drier cucumbers, like english or persian.
then slice them longways and remove the seeds, then plank or dice them and sprinkle some salt over them and spread them over a towel in the fridge for a couple of hours. scrape them back into a bowl and go on. watch your seasoning, though, because they will retain some salt.

Cut them in half, scoop out the seeds. Then grate them, add some salt and leave in a bowl for 30 minutes or so. Then drain - put the shredded cukes on a muslin or kitchen towel and squeeze some of the moisture.

the fastest "hack", is swtching cucumber with green pepper in which case you're technically closer to kliptki, a sweeter yogurt based dressing, but if you don't change anything except green pepper, the illusion is near perfect, and peppers don't need draining, nor salt to "un-gorge" (lose their water, not sure it's a word in english)
the heavier you go on fat, the longer it will keep
just keep it as long as you would the yogurt it's made with, it's the element with the shortest shelf-life (cucumbers alone would rot faster, but tzatziki preserves them, the yogurt will go bad before the veggies)

the change in acidity, water activity and introduction of other bacteria would change shelf life. Also a whole cucumber will last longer than a blended cucumber in a fridge, so that will change it too. But good job on the low iq post, I hear that the thing to do on /ck/
