Frozen salmon and veggies. Thaw the salmon in a bowl over running water in the sink and roast the veggies for as long as needed, then pan-sear it skin-side down first. It's cheap, tasty, and healthy. Salmon has almost no mercury so you can eat that a lot.

Chilli is the obvious answer. Buy spices in bulk and dry rice and beans (no microwave packets, though canned beans are still decently cheap). Use turkey instead of beef if you want less fat.

I don't find chilli a very satisfying thing to eat regularly. It's good here and there or on something like a hot dog but i wouldnt want to eat chilli multiple times a week.
