Traditional Southern Collard Greens. You take the collard greens on the stem and make a broth first with a whole turkey neck and the neck bones can actually help the broth too. Once the broth has been going for a while you want the collard greens to go in the pot with a low heat and add some bacon as well and let it go on low heat throughout the whole process and when the greens and bacon are in cover the top. This can be served as a side with anything from Turkey, Ham, or Pork to fried chicken.

I did diversity training a few years ago, and suspect your boss got the same people. The task is a trick. You put effort into the dish and then get shamed for participating in cultural appropriation. On the bright side the task did make me learn some basic principles of getting a dish to take up the flavors of the herbs and spices, so this was one time I actually benefited from workplace bullshit.
