Having a few pieces of quality cookware is very nice. Triple-ply (or more) stainless is truly top-tier, and doesn't get ruined like cast iron or nonstick. OP, if you are slowly acquiring these and looking for deals, keep an eye out for a 3 quart saucier with a lid. It's the best for vegetables.

What's a good stand mixer and food processor. I want to use them both for pastries, so far I have being using a hand electric mixer for my home-baking and it is hell, I see that now is the time for me to get a Stand Mixer, then a food processor for more niche applications. I was going to go for Kitchen Aid but I realized that it was a self-imposed monopoly, I think there should be better stuff at a better price, so I wonder what I should get instead. I would want a semi-profesional mixer since I do sometimes produce for a lot of people, but I still must keep in mind that I am working on my house's kitchen

I mean what hes asking for isnt unreasonable. The competition could easily give kitchenaid a run for its money if they decided to maybe raise their prices(or cut profit) to put in better gears in their machines. Like, it isnt a secret, the reason kitchenaid ones are the best is because their gearing system is LEAGUES better than the competition, because the competition is ALWAYS cutting corners there... because i guess they're happy with the status quo.
If they just invested some of their profits in better fabrication for their gears and sent out a few review copies to influencers or even established places like consumer reports, they could up-end the entire market in a year or 2. For whatever reason they dont want to(And i legit dont know why, since some have decided to put more money into their motors or paddles or whatever, compared to kitchenaids, which still results in a shittier mixer cause the gearing system is what fails)

Same shit with blenders, btw... Vitamix's blade assembly is the biggest reason it stands above the competition. No one except blendtech tries to take them on there, even if the other companies have far bigger portfolios and markets. Oster and kitchenaid are far bigger companies that make more things and have capitol to absolutely dominate that segment, yet even their premium blenders that are made to go up against vitamix's are significantly worse. Its not like there's trade secrets in these things, a drunk youtuber(AvE) can disassemble one very easily explain what would need to be done to make one better than the other for marginal increase in production costs. For whatever reason, these companies dont want to do it. Not to sound like a conspiracy retard, but its almost like there's an agreement that certain companies wont get muscled in on/challenged, in their chosen market.

The Bosch Universal is on my list and may be better for your baking needs. It is supposed to be much better for heavy bread dough like peetzer. I have several Sunbeam and KitchenAid Mixers and the Bosch is next on my list.

I would also keep an eye out for a commercial grade KitchenAid or a Hobart N50. I have seen used Hobarts on. CL, OU, LG, and other online spots for the price of a new KitchenAid. ~$500 or so. And that would be heavy duty enough for all your home baking and should last a lifetime.

Pic related a 1996 Ultra Power I got off OU for $40, a month or so ago. I use it for tougher jobs and save my vintage mixers for things like cakes and icing.

I just got this bad bitch for $75. I had to clean it up and boil the spigot and stuff, but it runs like a champ. It has a bent switch and a broken handle but I can get those factory parts off eBay for maybe $40... or use 3.5 inch drawer pulls for handles that cost a couple of dollars. The gaskets are all available online but I saved a lot of money fabricating them myself with materials from Hobby Lobby and Lowe's. Next on the list is fabbing up an oak tamper for it with my drill press and some oak dowels from Lowe's for under $10. which will give me enough material to make 3 tampers, and the other two I will probably sell online where the standard price is $20. I'll probably put them up for $15.

I am more of a pastry guy, but I have made bread in stand mixers and noticed some of the smaller Kitchen Aid models struggling to knead even simple brioche, so it's good that you mention it since I do want to get into baking proper bread.

From what you are saying I suppose that my best option is the second-hand market? What should I look-out for since this is my first stand mixer and I am very ignorant when it comes to hardware

As the doughboy for my local pizzeria I found that even the commercial Hobart mixers aren't ideal for kneading dough. The funky design of the Hobart/KitchenAid style orbital mixer's dough hook does an okay job of the first and messiest step of the process... mixing the flour and water etc for the first rise, but I still kneaded the dough ball by hand after. The Bosch Universal seems to have a well designed dough hook that does a more thorough job incorporating the ingredients and is designed in a way to produce a larger amount while not overloading the motor and drive gears. You should check out some YouTube videos on the Bosch and Bosch vs KitchenAid.

Some things to look for as far as KitchenAid is concerned is the newer models are designed with a sacrificial gear so that the gear fails before the motor goes out. These can be replaced and you can do it yourself if you're handy. The older Hobart made KitchenAid models are said to be tougher, but at the cost of having weaker ~300 watt motors vs the ~600 watt big dogs they make now. I want an older Hobart made lift bowl mixer myself, and a K4B model with the horn and fin on the top to round out my personal collection. Pic related. I have several more not pictured. Old Hamilton Beach and Dormeyer's as well as KitchenAid and Sunbeam.

Also there are some lower end KitchenAid models that don't have a spring where the paddle locks into place and they make annoying clacking while the attachment bounces around when mixing.

No. It looks like another take on the Bosch design. They look good from the videos but are so expensive. If I were to spend $700 on a kitchen mixer is would be on a used Hobart N50. Those are tanks, and despite not being optimised for heavy dough it will still plow right through the worst part of the job. But I am nostalgic about old Hobart designs including their meat slicers and dish washers and my dream kitchen would be decked out with Hobart gear so I'm biased. You can get every part for those machines too, they are built to outlive you.
