it's around 87.5% proto-soyboyism but the real answer is that the meat that has been seasoned, tenderized, etc. is made bland and hard by overcooking.

you can have meat well done if you intend to do so from the start and prepare it accordingly with a suitable marinade that penetrates into the meat, and cooking it for a long time at moderate heat. There is nothing wrong with well-done steaks or well-done meat in general, as long as you do it properly with a good marinade and broiling it with something to lend extra moisture instead of open-flame grilling or frying in a skillet.

but if you go to a steakhouse or whatever their primary audience is the HURRR RED MEATZ UGHNNN IM SO MANLYYYYYY crowd that get all their shit blue for Man Card Renewal Points, so what you're getting is a piece of tenderized steak that has some salt and pepper on top and that's it, and it's getting fucking nuked on a black-hot flat-top grill. The outside isn't going to have a pleasant char of blackened spices, it'll be outright burnt, because it'll have been cooked for so long on so hot a grill to get the inside brown that the outside has already undergone nuclear fusion and decayed into pure charcoal.
