I won't drink french wine. Sour, disgusting, shit. Never had any I liked. Years ago there used to be a french bird reguarly at my friends flat parties. She would drink all my chilean whilst slating it then insisting her french wine was superior and drinking it second. It was close to vinegar.

wine tasting has literally been proven by a troll to be bullshit, this guy pranked all the top sommeliers in the country by fooling them into complementing allegedly horseshit wine in a blind test. they couldn't even tell white from red apart, which is hilarious because it actually is easy to tell them apart even for a pleb but for some baffling reason these "pros" even failed on that front and have been coping ever since.

Picture this: It's 93 degrees out, high humidity, and cloudless, Your wine rack consists of nothing but cabernet sauvignon, syrah, and rioja. You have an intense thirst for wine that is cold and crisp. You don't own any rose because you're male.

Just when you're about to give up and drink a non-alcoholic beverage, you remember the kabinett riesling in your fridge. You crack it open and pour an 8 ounce glass while eating enough sharp cheese and prosciutto to raise your blood pressure several points. Life is good.

I wouldn't have those red wines. I'd likely have garnacha, monastrel, pinot noir, malbec, maybe some merlot.

And I drink white wine every so often on a rare occasion. But last time I had it at night while lurking, it did not vibe with me at all. The freshness and sunniness of it contrasted badly with the vibe. No sir, gimme red wine any day.

Red Wine friends,

I have a bottle of rioja that I opened probably a month ago, maybe 2, in my warm pantry. It's like a half cup of wine that's just been sitting there in the bottle. It smells raisinlike and oxidized like sherry, actually quite pleasant. Is this still safe to drink?

Absolutely wrong there, anon. Early screw caps barely let any oxygen in so the wines closed with them actually last longer. Modern screw caps and synthetic corks are modeled after the oxygen transfer of traditional cork, albeit with more consistency and less failure. To test the effectiveness of non-cork closures empirically in the long-term is still going on, but there's no theoretical reason why they would fare any poorer.

Also, sulfites are used to prevent premature oxidation, but also prevent sweet wines from refermenting and guard the wine from unwanted microbes.

I drink wine because I like the effects and compounds that add to it. I couldn't care less about "mouth feel" or "finish" or "tannins."
The best part about wine is that it doesn't take too much to give you a buzz and it contains compounds that give you a mood boost+some health benefits.

it probably was all over the place quality wise, if you're in a wine drinking area you probably remember the natural wine fad about 10 years ago and how some were great and some were barely drinkable. and that's still with fairly modern stuff like sanitizers for the containers. imagine that x1000, that would be old timey ancient wine.

of course people still drink it, because anything can be a "natural wine" and stuff like flash detente and mega purple are gross. romanee-conti is a "natural wine" just nobody calls it that.

when I say it was a fad that's now passe I mean the way people used to go "oooooh I can really taste the VO and damm the brett funk made me vomit in my mouth a little this is SOOOOO GOOOOOOD", people have a lower tolerance for stuff like that now, although in general people are a bit more open minded about it than they would have been 20 years ago

of course, beer spergs are only now discovering those flavors and as far as I can tell it's still the epitome of cool to pretend to like nasty garbage tasting beers

they're mostly biodynamic farmed vines and they use ambient yeast fermentation

natural doesn't mean you have to use qvevri sealed with beeswax, it's a pretty loosely defined concept and there's no official list of what is allowed or not allowed, hence why some people advocate for saying "non interventionist" or "minimalist"

>> No.14388225

True, but just because they are biodynamic and use natural yeasts doesn't mean they don't manipulate the wine in the cellar in some way.

Hell almost everyone worth a damn uses natural yeast ferments these days, little reason not to.

I would say new oak is far more additive than controlling temperature fermentation, but you still might be right.

I honestly prefer a strict definition of organic farming, natural yeast ferments and no additions to the wine at all. I guess new oak is fine to a certain extent. Natural is really more of a spectrum than anything.
