Why are Italians and New Yorkers always like this?

"Bite of chewy, warm cheese" = chewy and stretchy layer of provolone and mozzarella (only the layer is thicker)
"Savory burst of fresh tomatoes and sauce" = exact same on the Chicago pizza (only the layer is thicker)
Literally the same combination of flavors doing the same roles in roughly the same proportions, only there's more of it per bite than in neapolitan-style pizza. The biggest innovations Chicago-style pizza brings to the table is adding cornmeal and butter to make the crust richer, reversing the order of the toppings, and altering the sauce recipe to accommodate direct heat in the oven.

Don't know if I got shit luck but I tried one from Pequod's and one from Giordano's and the crust from both was like fucking Digiorno's tier. Fucking doughy cardboard tasting trash.

One thing most people don't realize is that deep dish refers to the old Pizzeria Uno style pizza. It's a heavy crust made in a deep pan, hence deep dish, and generous toppings. Then there is the stuffed pizza. This would be like Giordano's. This is made in a regular pizza pan starting with regular rolled dough. Then pile with sauce, cheese, toppings. Then another layer of dough is placed over the toppings and baked. Sauce is poured over the top when it's done. When people say Chicago style they can mean either of those.
