I live in Burgundy. My favorite cheese is local, called Charolais. Pictured is fresh, semi-fresh and dry. I also really like Epoisses and aged Comté.

I would say semi-dry, although I take a dry one from time to time. Dry has its own taste and is much stronger, but it also hides the subtlety and one of the distinctive aftertaste of the cheese. Dry is also a bit more annoying to eat as it tends to crumble in small rigid pieces while semi-dry can stay in one piece on the bread (pic related)

Where do you live? I live in a small city, and have no problem finding most cheeses at my local Kroger. Yeah, specific varieties from specific makers aren't widely available, but can find most any type of cheese there. And Wegmans has an even more massive cheese selection.

I've had no problem getting good cheese anywhere in the northeast you just got to look a little harder (nicer supermarkets etc.). I found out last week I can special order morelsl mushrooms and zucchini flowers so it's possible you can do the same with even more things at farmers markets.

The best cheese I had was an organic soft goat cheese in Morrocco. That was mindblowing shit.

Other than that any good quality Dutch or French cheese. Except blue cheese.
