How do people manage to eat 3 meals a day consistently? If you work a full-time job it's basically impossible to get breakfast, lunch, and dinner in. I basically never have time to make/eat breakfast, and I'll just have a quick/easy lunch and a nice dinner when I get home.

I make my bf meals for the week and recently started logging the calories and I realized even with the amount of butter I was adding it still wasn't much food.
OP, id eat prepped boiled eggs in the morning then meal prep + 2 sandwiches to hit ~900 cals for lunch.
For dinner I would meal prep a meaty stew or soup and eat it with whatever is easiest for u to make at home.
have buttered bread or cheese and crackers on hand to fill you up in between meals. To escape fastfood aids you need to start meal prepping
Bake beef, turkey, chicken or pork on Sunday along with a large pot of rice with some frozen vegetables in it, toast the rice in butter for more flavor before adding water and vegetables. add lots of butter to things, a stick a week for a single male is a good goal to start.
That should feed you through the week, make two or three meats so it doesn't get repetitive and you can get a balance of nutrients.

Ultimately, this true, though some people do have shitty commutes, pretty fatiguing jobs, and even long shifts like a 12hr fire or hospital working. But you have to know yourself, and still be healthy.

My commutes in DC and Miami both were probably 1.5hrs of actual bumper to bumper rush hour each way. I admit that breakfast for me is just fine to be iced cold brew coffee in a tall metal insulated Tervis or starbucks 16oz mug with a straw. I might make my own, or i might buy BOGO Stok or Starbucks, alternateing from unsweetened and my own sugar and half n half to mixing it up in the colder days with hot earl grey or iced jasmine tea or instant Bustelo in microwaved hot milk. One caffeine serving upon waking, with something small plus a banana, and sip that while I prep a sandwich for lunch. Into the SSS and get ready, then grab the drink and lunch for the car. Lunch will be chicken or egg salad, smoked turkey or other meat in a wrap with random veggies and arugula (might slice a baby bell pepper, cucumber, carrot shreds, cole slaw mix plus cream cheese to glue the wrap closed). I shop on Sunday, get about 3-4 days of sandwich fixings and will morph one of my dinners into leftovers for lunch. On an off day, I might make microwave bacon at breakfast and BLT lunch, or baked potato or canned soup w/crackers. Lunch box has 4 snacks that I might just keep uneaten, or maybe I'm ravenous. A tangerine or washed apple, a fruit or nut bar, some gummis, packet of instant coffee or crystal light. I have 2 frozen water bottles in the lunchbox, one to drink, one to keep the sandwich cold, and maybe drink on the ride home. I might have a soda or iced coffee in there, but will ignore it, just transport these extras back and forth just in case I work late.
Dinner? pre-covid, I ate out 2-3x with family or friends or just cravings, but if you're being frugal, 30min meals.

I know the struggle of having that happen. It's not normal, though. Work on reclaiming you evenings from the black hole of time-suck. Make a list of which chores you want done so it feels less infinite, and do a predetermined amount each night, then stop. For breakfast, frozen berries with yogurt is very fast. Fresh fruit is more delicious, but you are in a bit of a hurry.
For lunch, a sandwich really is fine. Try shopping once a week if you can.
