I always thought the Midwest kind of got shafted.

I live in Minnesota but I travel alot.

I think food suppliers that supply restaurants and whatnot grade the quality of their food, ie a bunch of sirloin steaks might all be sirloin steaks but some of them are going to be better than others. I imagine they send the better steaks to areas where locals can easily acquire high quality comparable product. The Midwest doesn't really have any big protein so I think we get the lowest grade products. I mean we aren't really going to know the difference between a top tier high quality lobster and some garbage product.

Obviously small independent restaurants here and there are going to be awesome and get quality ingredients but I think by and large this is a problem.

We'd also don't have any amazing cultures or state dishes. Our biggest ethnicities are German Norwegian Somalian Hmong and mutt. None of which are known for great cooking.

Look up the history of lots and zoning in the US. After the original 13 colonies it got a lot cleaner with a nice and orderly grid system. This is VERY apparent when you get as far west as states like Indiana and Illinois. Compare it to the places like New York and Pennsylvania. For the real odd ball, go look at how Louisiana is divided up. All of this can be seen pretty easily from satellite maps.

The Midwest, and I say that after living in both big and small towns here most of my life.

Most local recipes are either some variant of diner food (horseshoe patties, sliders, pork patties, etc.) or casserole/pies/cakes.

For towns of a few thousand you usually one minimal grocery store and a dollar store for food, a few chain restaurants, a generic American restaurant/diner, and maybe another Mexican/American Chinese restaurant or a fancier American restaurant. That's not to say they're bad, and there are plenty that probably make great dishes, but they are by-and-large unexceptional and similar between one another.
For larger towns and suburbs it is simply that scaled up, with more chains, Wal-Marts and niche grocers, and more dedicated cuisine restaurants.

It's only one you hit cities/metro areas of like 300k or more that you really get local cuisine of note and many exceptional offerings, like St. Louis, Detroit, Twin Cities, etc. Even then, I think only Chicago is the only city to be internationally known for their food.

Most towns that aren't suburbs and aren't nearly gone have a few chains, a grocery store or two, and a few local restaurants that are usually unexceptional outside of that town.

There are a handful of cities that have notable local cuisine and restaurants, but those are even more of an exception than on the coast.

If it's more expensive you just eat out less and spend more on groceries relative to other things. That has nothing to do with the quality of the food itself unless you subsist on eating out and getting premade foods to the point that it prevents you saving money over time (excluding other necessities).

Coming from Taiwan, wage/food price ratios here are extremely better here, even in NYC, and food is hardly considered expensive even in Taipei.

I have a friend in Ohio who regularly jokes Red Lobster was the pinnacle of fine dining up there. The problem for the south/midwest is options. Everything so spaced out and diner/chain/bbq is the most readily available. And much like olive garden where a sysco bagged pasta and soup is a breath of fresh air. When you have other options in more densely populated areas regardless of state. There will alway be better options than a quesadilla burger from applebees

Well to clarify, boomers here also go to nice restaurants, they just have a different conception of what a nice restaurant is. To boomers a nice restaurant is an expensive steakhouse, or maybe a fancy classic French or Italian place. But its like a special occasion thing unless you are wealthy, otherwise they gravitate toward shitty chain restaurants or cheap classic american restaurants, they definitely don't only go to shitty things, just way more likely to consider shitty chains cool than Millennials, and the scope of local decent but not fancy places they like is pretty narrow, like very similar menus full of classically popular food.

I still think the food culture is massively different in the US. For example, steakhouses arent really a thing here. We have a bunch of restaurants that serve local specialities, like mussels and fries, or lobster or things like eels in green sauce or more classical things like vol-au-vent. apart from that we have loads of thai, korean, vietnamese, chinese, mexican etc hipster places but also very authentic vietnamese and thai places. There are definitely "hipster" takes on vaguely asian foods, and of course classic American Chinese food is extremely Americanized (being created at a time when most authentic Chinese people could barely even afford more than a bowl of rice, by immigrants surprised at the massive surplus of cheap high quality ingredients, marking the same transition many Euro immigrants faced a few generations earlier), but there are a lot of not particularly Americanized Asian places. Okay, but we do have the best dairy products in America. Our milk, cheese, and ice cream is god tier. No, Ben and Jerry's faggotry doesn't even come close. Try any of our dairy products and you'll see, the problem is we don't really make any creative dishes out of them. On their own though they are very good. Also we are the number 1 producer of grain and so have the best bread products. There are so many bakeries around here; fresh baked goods are abundant.
