I always thought the Midwest kind of got shafted.

I live in Minnesota but I travel alot.

I think food suppliers that supply restaurants and whatnot grade the quality of their food, ie a bunch of sirloin steaks might all be sirloin steaks but some of them are going to be better than others. I imagine they send the better steaks to areas where locals can easily acquire high quality comparable product. The Midwest doesn't really have any big protein so I think we get the lowest grade products. I mean we aren't really going to know the difference between a top tier high quality lobster and some garbage product.

Obviously small independent restaurants here and there are going to be awesome and get quality ingredients but I think by and large this is a problem.

We'd also don't have any amazing cultures or state dishes. Our biggest ethnicities are German Norwegian Somalian Hmong and mutt. None of which are known for great cooking.

Look up the history of lots and zoning in the US. After the original 13 colonies it got a lot cleaner with a nice and orderly grid system. This is VERY apparent when you get as far west as states like Indiana and Illinois. Compare it to the places like New York and Pennsylvania. For the real odd ball, go look at how Louisiana is divided up. All of this can be seen pretty easily from satellite maps.

The Midwest, and I say that after living in both big and small towns here most of my life.

Most local recipes are either some variant of diner food (horseshoe patties, sliders, pork patties, etc.) or casserole/pies/cakes.

For towns of a few thousand you usually one minimal grocery store and a dollar store for food, a few chain restaurants, a generic American restaurant/diner, and maybe another Mexican/American Chinese restaurant or a fancier American restaurant. That's not to say they're bad, and there are plenty that probably make great dishes, but they are by-and-large unexceptional and similar between one another.
For larger towns and suburbs it is simply that scaled up, with more chains, Wal-Marts and niche grocers, and more dedicated cuisine restaurants.

It's only one you hit cities/metro areas of like 300k or more that you really get local cuisine of note and many exceptional offerings, like St. Louis, Detroit, Twin Cities, etc. Even then, I think only Chicago is the only city to be internationally known for their food.
