A lot of people would probably end up complaining if they ordered one and then saw it wasn't completely covered with cheese, they'd think you're ripping them off. They all mostly use low moisture mozzarella which can be used in higher amounts without making the pizza too wet like fresh mozzarella can, but they can't substitute each other.
