What purpose does the Michelin guide serve, when the restaurants on it are too pretentious for real customers and usually go bankrupt trying to peddle their obnoxious dishes?

anyway the purpose is to serve as a guide to fine dining places
it's not for your average joe, either you like fine dining or you don't

recently they've been accepting exceptional regular dining places as well though

It was originally made for truckers and business travelers, as globalism dialed to 11 with boomer service travel jobs the guide became more pretentious because every plane/truck wagie got more picky as time passed.

The Bib Awards are still useful and close to the guide's original purpose. Stars are more like warning signs.
