pretty good. i can cut most vegetables pretty much any way and fillet a fish. i'm just not very fast. also a homecook so it doesn't matter as much, not like i have to produce and prep in bulk

I don't think those knife skills are anything particular he's just cutting up pork back fat. the worst thing about that video is they don't show the final product with anything cut into it/a bite/whatever. bacon is kinda difficult to cut easily so I feel like that stupid tower thing would turn into a mess the moment you expect a customer to attempt to eat it. it's trash
