We're making fun of the fact that he has inadvertently done everything possible to ensure that the cheese doesn't melt properly.

>start with cheese that doesn't melt well in the first place
>cut the slices of bread too thick so heat takes longer to penetrate into the center
>use high heat by cooking in the fireplace, so the crust burns before the inside has a chance to warm up
>and just to make sure there's absolutely no chance of any melting, let's add kimchi (likely cold from the fridge) in the middle to act as a big heat sink

He literally could not have made it more wrong if he tried, unless he dipped the cheese in liquid nitrogen first. This is beyond even Ja/ck/ levels of culinary retardation. Yet he has the nerve to present this as good cooking.

It's not an 'authentic' or traditional grilled cheese but unless it's being sold as such it's a pointless exercise to mention how unorthodox it is.
Believe it or not a bit of burnt toast on a thick sandwich does not disqualify it from being bad. Cheese does not have to be molten to lose most of its firmness. Even if it was still solid there is no reason this should be described as 'inferior'- warming cheese from fridge temperature is still beneficial to enhance its flavour.
Kimchi adds a sour, acidic edge to the sandwich. These type of flavours have been paired with cheese for centuries.

It's not Ramsay who's bad at cooking (though he isn't incredible either) it's the fact that you're incapable of thinking through a dish.
