I'd just like to interject for a moment. What you’re referring to as Taco, is in fact, a method of consumption, or as I’ve recently taken to calling it, a way of eating. Tacos are not a dish unto itself, but rather another method of consuming a fully complete dish made edible without tools by the tortilla, sauces and condiments comprising a full meal as defined by traditional food culture.
Many Mexicans eat a modified version of a taco every day, without realizing it. Through a peculiar turn of events, the version of tacos which is widely consumed today is often referred to as a separate dish, and many of its users are not aware that it is basically the taco method of eating, developed by the pre-Columbian civilizations. There really is a taco, and these people are eating it, but it is just a way of consuming the dish they are eating.
Taco is the delivery system: the act of putting ingredients in a tortilla, folding it, and using that instead of a spoon or fork to take it to your mouth. The guisado is an essential part of every meal, but useless by itself; it can only be consumed via the use of a manipulation and transportation tool. Tortillas are normally used in combination with the rest of the meal: the whole system is basically a dish with tortillas on the side, or a complete meal. All the so-called “Tacos” are really normal dishes on a tortilla.

I'm a sucker for lingua, it's funny cause I always remember it being really "meh" to me as a kid.
My mom isn't that good at cooking that isn't baking I guess, because I fucking love it now.
My local place has been becoming a small chain and each location is a bit different. If you're in Grand Rapids I recommend the one on burton, not only do they make the most balanced burrito but their tomatillo sauce is the best I've had. I used to go to the one on Bridge st for convenience but decided to stop going after I had a gun stuck in my face twice in one summer.

I've noticed something very strange whenever I try to make homemade corn tortillas. Recipes online typically tell you to use a 3:4 ration of water to masa harina when making the dough. For me, this always ends up making the dough way too dry. I end up needing to use closer to a 1:1 ratio of water to masa harina. Is this typical? I don't think I'm buying a weird brand of masa harina or anything.
