Never seen a Slav cuisine thread. Tell me, what did grandma used to cook for you?

Yes, the Balkans count.

>> No.15011451

Balkan food is so underrated. Serbia in general was a total positive surprise. They absolutely thrash the USA on making burgers. Duff Burger in Belgrade blew my mind with their 1lb beef burger with cheese and fried chicken in the middle.

Western food feels very artificial, I don't know what the difference is. In Germany vegetables literally taste like plastic, I don't know what they do to meat but it doesn't take in spices very well and it's just bland. Food just tastes better in the Balkans, no idea why. We do also have higher rates of stomach cancer so who knows, maybe it's a trade-off.

I've never been exposed to Slav cooking until I found Boris on Youtube. I tried some of the recipes and realized that Russia is very bland.

I also realized that I fucking love it at the same time. As long as I doctor it up with spices at home, that is. I have a little Russian grocery store in my neighborhood with overpriced imported things and I like to walk through and look at all the weird shit on the shelves.

Boris always talks about "Doctor Sausage" and it's basically just Bologna, of which they have several kinds available. Halva is also incredibly delicious. It's like peanut butter.

Everyone that says that Russia has unappetising food should read some of the classic russian literature like Dostoevsky and Tolstoy and have their mouth water over the descriptions of food.
Me I am from Greece which is not Slavic but shares a lot of dishes and techniques with Balkan Slav cooking like emphasis on simple grilled meats and vegetables, more herbs less spices, vegetable and cheese pastes, very similar ingredients etc. Greeks from the Black Sea have a lot of classic Russian foods like borscht and pirozhki

Sure, for us it's obvious and while Balkans are slav speakers their diet is very much mediteranean, while the majority of slavs usually eat norhern stuff heavy in meat, buckwheat, fish and local vegetables.

Feta is hardly actually slavic, if we're autistic, which might paradox some mutts.

The stomach cancer is from your constant binge drinking and the fact that people still smoke indoors constantly.
Also I think you just have better soil than most places which gives your produce better flavor. >> No.15017155

desu I just grabbed a random aesthetically appealing picture from google images, but the recipe on the site is:

150 grams dried apples and pears (or just apples)
100 g smoked prunes śliwki
10 dried mushrooms (boletes)
300 g smoked bacon (uncooked)
2 duck legs
600 g boar ham
350 g beef (goulash cut)
300 g hunter's sausage (dry juniper sausage
3 biggish onions, diced
5-6 garlic cloves, diced
1 glass of dry red wine
2 kg sauerkraut, not too sour (you can rinse it if you feel it'll be too sour)
½ litre broth (beef or chicken)
przyprawy: 10 grains of juniper, 5 grains allspice, 3 bay leaves

seems like a pretty good recipe, though the stock, apples and 5 different types of meat might not be neccessary (prunes, boletes and red wine is the patrician choice though, so they probably know what's up)
remember to let it stew for several hours (you can do it intermittently), making good bigos takes time but it can be a really delicious, intense and surprisingly complex dish

In other stuff i'd recommend looking into belarussian/lithuanian/eastern poland region for inspirations. They have some wonderful dishes like babka ziemniaczana, kołduny litewskie, cepeliny, while the rest of the country isn't very unique. Please stay away from any christmas recipes, as they are usually rather bland. If you want to try something slavic and tasty - make your own kosher dills (ferment small cucumbers with garlic, horseradish, dill and generous amount of salt) or sauerkraut, try incorporating groat/kasha as a side dish (or make a risotto-style dish, it's very fashionable here) and try to buy polish mountain cheeses.
