I dont understand why the beer community is so obsessed with making everything as bitter and nasty as they can. Is it just to prove how manly they are? Or do they genuinely enjoy IPAs and Stouts that are a chore to drink?

Anon, people have different tastes. I like IPAs and can appreciate bitterness as a style. A well-made IPA also has enough sweetness and ABV to make the bitterness balanced, however.

It's also that IPAs became very trendy. So we're seeing a ripple effect still. If you're in flyover territory, you're probably at peak IPA right now. In California we are riding the other side of that wave now-- IPAs were the style that broke through the macro-brew monotony and introduced most Americans to other styles of beer. As people come down off of their 7.5% pine-scented high, they're starting to branch out and hopefully get into more and more styles as time passes.

You're off the mark about stouts, though. Stouts are not a style characterized by bitterness. Many stouts are only slightly hopped and low in alpha acids. Within the realm of stouts there is huge variation.

Lagers really are catching on and I'll admit that I've been one to under-appreciate them myself.

Guinness is a dry Irish style-- these are more hopped and less sweet, so the bitterness comes through more. It's possible that dark roasted malts aren't your thing, but if you like chocolate or coffee that shouldn't be the case.

It's hard to get too specific with style recommendations, because when it comes to American styles, the only ones are really "porter," "stout," and "imperial stout." Porter and stout are both quite poorly-defined terms and mostly come down to which name the brewery prefers. so distinguishing between them won't be super helpful, but I would say look more to porters than stouts and you'll probably find something verging less bitter and more sweet. "Imperial," you probably know, but just in case you aren't aware, just refers to the gravity/ABV of the brew. Imperial styles get their name from the royal courts where very strong beers were prepared for nobility. These will of course be stronger, sweeter, and more intense, but I wouldn't recommend them to someone trying to get into the style.

Beyond that, there are many styles of dark beers that are not American ales, including dark lagers. Beer is the most diverse beverage that there is, so there's really a ton out there to try, but it's a matter also of what you find readily-available locally. I've even tried wild-fermented barrel aged dark beers; you can get some really interesting flavors out of the dark roasted malt, which can be developed in really an infinite number of ways. Look also for adjuncts like oatmeal, coffee, and coconut, which can impact the beer's final taste and mouthfeel quite a bit too. It's worth mentioning that Guinness is not carbonated but rather nitrogenated, which gives it a mouthfeel that could come off as flat, which enhances the perception of bitter flavors.

It's pretty different from the West Coast style that was dominant a decade ago, but it's definitely not "the other side of the wave". I honestly don't remember this mythological time when you couldn't find anything but IPAs on tap. Sure, there was a major oversaturation of the style, and way too many start-up breweries all doing the same thing, and usually doing it sub-par. Half of those places went out of business 4-5 years ago. Still, even at that time only maybe 20-25% of the menu was IPAs, while the rest of it had a little of everything, and usually a couple wildcard things. Also, IPAs were, and still are popular, because that's what people who brew beer like to drink.

Stouts are a pretty diverse style. Can range from milk/sweet stouts to Caribbean stouts (aka Dragon Stout or Guinness Export Stout) and be pretty complex. Depending on where you are, I'd look for any local Russian Imperial Stout examples that are 7%+. They're roasty and malty and very rich compared to a standard dry stout like Guinness. Also some barrel aged stouts like Founders KBS and Goose Island Bourbon County Stout are pretty good if you want a monster of a stout and similar styles can be found around this time of year locally.

Bock as a category is pretty cool to dive into because, given how strict the German beer purity law is, the category uses almost everything German beer does but then gets it super cold to encourage higher ABV brews.
Normal bocks are balanced, maltier then lagers and good Fall beers and can be either pale or dark dunkelbocks with more roasty characteristics.
Maibocks are basically helles lagers with that nice extra maltiness and slight meaty qualities that bocks have with the smoothness and fruitiness of traditional Helles which are also great food pairing beers.
Then after doppelbocks there's eisbock. Which is basically when you do a doppelbock to the point of freezing the beer and then removing the ice/water and can be anything from 9% ABV to some crazy shit like 57% ABV. Its like Samuel Adams Utopias on crack but actually tastes way better then that luxury priced swill.

Bocks can be basically anything you want them to be within the realm of a malty, higher ABV beer. Eisbock isn't for everybody given how weirdly meaty it can get but they are still very unique even compared to doppelbocks.

There's also weizenbock, which is a wheat beer made like a bock that can also be done like an eisbock.

As a side note, I brought it up to my dad and apparently one of his friends has an unopened bottle of Sam Adams Tripelbock. Should I be as hype for it as advertised? Don't really care for Sam Adams too much but I their seasonals are really good.

If you don't count the usual macro stuff, it's roughly 6 or 7 IPAs, 1 brown ale, 2 different Sam Adams lagers, and that's basically it

Some of my favorite beers are IPAs and some of the most revolting swill I've had the displeasure of drinking were also IPAs. It's the curse of being the trendy style for an entire decade. The over saturation of the market as well as the hundreds if not thousands of terrible attempts at chasing the trend gave the style a bad name.

I've basically given up on trying new ones at this point. I spent my entire early 20s drinking nothing but hoppy shit. 26 now and I've been on a big Belgian kick recently. Tripels have quickly risen to the top of my favorite styles.
