Takes a high quality establishment with a real caring chef, to make baked mac and cheese well to order, broiling the nice crisp topping, baked long enough to firm up the edges. They need to charge a bit for it, so might throw some lobster on top to make the price make sense.
The reason it's bad in restaurants? The crappy places add eggs like the ghetto cheapo versions families make at home for their family holidays by the gallon. Also, they will use less expensive, less flavorful, less aged, lower amounts of cheese, more filler. If your family makes shit like that, you'd think it was even good. Bleh.
My lb of pasta mac casseroles might have 1-2lbs of various selected cheeses from my fridge. Very aged. My noodles will be thicker substantial noodles, celentani, or like a penne rigate, with those ridges to hold more sauce. They get a significant 35 min or so bake to brown the edges.
Why is powdered style Kraft good to people? It is made with your own real milk, and real butter. That's why.
