Not sure if it's on youtube anymore, but theres a fantastic series called "marco cooks for..." where it's young edgy marco in his prime cooking unbelievable french cuisine for his past mentors.

In his heyday he became the only chef to get the highest rating possible in the michelin guide. Gordon Ramsay was there working for him. Kept it up for a while at the sacrifice of everything else. Gave up his stars and now he has a bistropub type thing in england called the yewtree inn where he cooks comfort food and actually enjoys things other than cooking at the highest level possible.
