We're making roast chicken tonight to try out my new roasting pan. I would have posted a picture earlier but I was busy with prep work. What we have are

Salt pepper cayenne
Butter thyme lemon zest salt garlic
Shallot Onion Carrot Russet Potatoes
Lemon Wedges and leftover thyme
Whole Chicken

1/8 cup of butter and flour
half a can of evaporated milk
ground clove, onion powder, paprika
quarter pound of cheese

I had all of the ingredients laying around except for the bird. It's crazy how cheap rotisserie chickens are but at least I'm going to get a veggie side with mine and I already cut the wishbone out so it will be easier to take apart. Whole young chicken only cost $4 at walmart and I had the other ingredients in my pantry already. I think this meal might be $8 total. The evaporated milk was leftover from making fudge the other day so I made the mac and cheese with it otherwise I would have used cream.

you would pour them off into a pan and then thicken with roux. I didn't bother with this tonight because the roast took forever to cook. I also should have stirred the veggies at some point when I was taking it out because they were uneven. if you were using drippings from read meat you would basically be making an espagnole, for chicken you would make velouté. they are two of the five mother sauces. it's an easy cheat. pan drippings + roux is one of the two depending on the type of meat. with a roasting pan like mine, I've seen people throw the roasting pan on a burner to finish the sauce. that way you only need an extra pan for the roux.

>24 hour brine of water, salt, sugar, tostad coriander, fermented shrimp paste, pepper corns, kaffir lime leaf, fish sauce
>5 hours in the fridge uncovered
> "rub" kaffir lime, coconut cream, dried Thai chilly, lime zest
>1hour 20 min at 400f (5lb bird)
