My final yield was 11.9lbs - one 5.0lb roast and the 6.9lbs remaining will be steaks.

I had 1.1lbs of trimmings - so a total of 13.0 after dry aging, down from 15.4 lbs - so 15% weight loss due to moisture. I lost 8.4% to trimming.

So $18 a lb for dry aged USDA prime ribeye. I’m pleased.

I enjoyed it a lot actually. What recipe did you use? I used this one: https://www.cookingwithshereen.com/post/steakhouse-creamed-spinach I added a bit of Parmesan in place of some of the Gruyere.

It’s basically wilting spinach into a slightly overdone bechamel then adding cheese. I thought it was good. A lot of online recipes call for cream cheese which seemed really wrong to me
