Too much melting and dispersion, I'm afraid it would be too strong, really. Probably better to serve it on the toast instead, possibly with the jam.

If you insist on combining with eggs, do remove the rind, and maybe only layer it on top, or wait to the very end so it doesn't combine completely, but remains in melty chunks.
