I work a lot erryday, also have my sideprojects. i make a dough every day, takes about 10 minutes, and Im having fun while doing it. I roll out the 72 hour dough, add toppings and in the oven it goes. no more than 3 minutes assembly and 7 minutes cooking, so that comes out to 20 minutes a day. Lower the temp and run it longer. Once you get that right, you can start upping the temp and lowering the time until you get it right.

Really though cooking is easy. The tricky part of being a chef is just coming up with new menu items (which is fun) and keeping shit-brained cooks in line (sometimes fun), but overall it's a fine job and I don't find it to be too stressful outside of say planning events, which does kind of take over.

I mostly eat Japanese food at home and don't spend more than like an hour a day on cooking and cleaning. Takes 30 seconds to make a pot of rice.
