A lot of this is based on outdated, flawed, or outright fabricated data. Okinawa is a particular example where the data was collected during a time of famine, and extrapolated to results many decades later. The primary study this entire idea of >carb good, fat bad! was based on was found to have discarded over half the data collected because it didn't fit the hypothesis.

If none of this convinces you, let me ask you a question: There are essential amino acids, and essential fatty acids, are there any essential carbohydrates?
